Jalapeno Dressing!

On my last blog, this recipe was hidden inside a recipe for a rainbow salad. I don’t think I need to tell you how to make a salad.  Wash and chop veggies and put in bowl. There, done! 😉  

So here is one (of many) of my favourite dressings to use when I’m feeling like more then just balsamic!

So here’s the simple & quick recipe! Enjoy!

Jalapeno Dressing

Ingredients:

  • 1 C raw cashews (soaked in water for 2 hours or 20 minutes in boiling water)
  • 1/4 C water
  • 1 Tbsp lemon juice
  • 2-3 Tbsp jalapenos, diced  (more if you like it extra hot!)
  • 3 Tbsp brine from jalapeno jar (if you want more jalapeno flavour, add more, but decrease water amount so dressing doesn’t thin out too much)
  • 1 tsp ground pepper
  • 1 tsp garlic, minced

Directions:

  1. Add all ingredients to blender. 
  2. Blend on low, using a spatula to scrape down the sides (you may have to do this a few times)
  3. If it still seems too thick, just add a bit of water, a few tablespoons at a time.
  4. Move to medium/high blending until smooth

    1. Yay!! Let me know how you like it! I used to be afraid of jalapenos lol and now I eat them all the time!
