Well, this is what I came up with and I can tell you I gave myself a pat on the back because this was delicious! My co-worker tried some and she said it was good too (since I’m a bit biased lol)

Green Curry Vegetables!

I really don’t know whether this dish should go by another name, but really, it’s vegetables with green curry so I guess it’s pretty straight forward when it comes to finding it a name!
