Beet Salad

This is another one of those, what’s in the fridge that would go together and be a healthy side, or be the main dish? Well, this is what I came up with and I can tell you I gave myself a pat on the back because this was delicious! My co-worker tried some and she said it was good too (since I’m a bit biased lol)

Sun-dried Tomato, Spinach & Pesto Pasta

This dish is simple, can be made in under 30 minutes and the leftovers make a delicious cold pasta salad! So make the whole recipe and eat it for DAYS lol. Well, depending how many servings you eat the first night.

Zucchini Noodle Salad

I’ve been looking up recipes to learn how to do more raw foods as I may be preparing meals for a friend who wants to go raw vegan for a while. If you’ve been following me for a while, you’ll know that raw vegan isn’t really what I do – so I’m teaching myself some recipes and the other day I came up with this.

Spicy Sweet & Sour Chick’n Stir-Fry

I love stir-fry for dinner! Seriously, I make a stir-fry usually once a week. A big one, so I can have leftovers (something else I love!). When I discovered a forgotten bag of Butler Soy Curls in the back of the cupboard, the thoughts of what I could make started to grow. A giant stir-fry was the answer!!

Caramelized Onion Hummus

Hey there! You know what I was thinking the other day? That I’ve been making this basic hummus recipe for YEARS and I’ve never shared it anywhere! I try to make this often as it’s a great snack with some veggies or crackers and is an amazing source of protein!

Late night munchie balls…..

You get up to traipse through the kitchen to see what snack will satisfy your munchies….something sweet, something salty, something crunchy, something chocolate……..but what?? What do we have in the pantry??

Warm Kale Salad

Well, this recipe is really a better fit for the cold, winter months, but…..here in Ontario, we know that we will still have some chilly evenings ahead for another month or so, so you have lots of time to try it! Or, maybe you’re the type of person who likes warm salads in the summer. No judgement here. It’s all about the food afterall haha.

Vegan Spicy Chorizo Tacos!

The best part about this? I’ve NEVER eaten chorizo before – ever! So, this is another one of those, I’m guessing it tastes like the real thing but have no clue, so you let me know if have and try this!

‘Beef’ and Broccoli

I haven’t eaten beef in over 20 years, but when I did, I LOVED beef and broccoli when we would order Chinese food. It was my mom’s favourite dish too.

Eggless Salad Sandwich!

One of my favourite things about the warmer weather is making sandwiches to eat outside! And as a kid, egg salad sandwiches were on my list of favourites, but as I moved on my journey into vegetarianism, I ate them less, then when I really forced myself to learn the horrific truth of the chicken/egg industry, I was done. Full stop.

EPIC MUNCHIES SALAD!

I didn’t know what else to call this, so went with Epic Munchies Salad – because this was Epic! And was created when the munchies attacked haha!
