This is another one of those, what’s in the fridge that would go together and be a healthy side, or be the main dish? Well, this is what I came up with and I can tell you I gave myself a pat on the back because this was delicious! My co-worker tried some and she said it was good too (since I’m a bit biased lol)

Sun-dried Tomato, Spinach & Pesto Pasta

This dish is simple, can be made in under 30 minutes and the leftovers make a delicious cold pasta salad! So make the whole recipe and eat it for DAYS lol. Well, depending how many servings you eat the first night.

Green Curry Vegetables!

I really don’t know whether this dish should go by another name, but really, it’s vegetables with green curry so I guess it’s pretty straight forward when it comes to finding it a name! The main photo includes the Salt & Pepper Tofu I made (with puffed tofu!); I will share that recipe soon. It’s pretty straight forward, but I still want to get it just right before I share!

Warm Kale Salad

Well, this recipe is really a better fit for the cold, winter months, but…..here in Ontario, we know that we will still have some chilly evenings ahead for another month or so, so you have lots of time to try it!
