The simplest thing we can make is a salad. Chop up some veggies and splash some dressing on it. Pretty simple right? Then why so much hate for salads??? They are the original “bowl”!!!! In all honesty, I love salads, but they have to be fun and contain all of the good nutrients our bodies need, not just chopped vegetables. Get creative when making salads, they can contain fruit, grains, seeds, nuts and enjoy the rainbow of vegetables. 😀
Contrary to what the title of this post says, I agree with Bart Simpson, you can’t make friends with salad – because it is made (mostly) from PLANTS which aren’t alive!!!! So whenever you see those posts from trolls in vegan groups, make sure you agree with them that you cannot make friends with plants – however you can make friends with animals hehehe……
This is just one ingredient list, make any changes to it you want, but if you need to, this can be your guide!
Ingredients:
- 1/2 C kale
- 1/2 C romaine lettuce
- 1 medium tomato
- 1/2 yellow bell pepper
- 1/2 C purple cabbage
- 1/2 avocado
- 1/3 C chickpeas
- 1 tsp of sea salt & pepper
- 1/4 C mixed of chia seeds, hemp seeds and sunflower seeds
- 1/2 a piece of whole wheat or rye bread
- 1 garlic clove
- 1/2 C Jalapeno dressing:
- 1 C raw cashews (soaked for 15 min in boiling water)
- 1/4 C water
- 1 Tbsp lemon juice
- 2-3 Tbsp jalapenos, diced
- 3 Tbsp brine from jalapeno jar (if you want more jalapeno flavour, add more, but decrease water amount so dressing doesn’t thin out too much)
- 1 tsp ground pepper
- 1 tsp garlic, minced
Directions:
- Wash and chop up all of the vegetables into bite -sized pieces and place in large bowl.
- Rinse chickpeas and toss in sea salt & pepper. Air-fry (or oven roast) at 350ºF for about 10-12 minutes, until crispy.
- Make dressing by adding all ingredients to blender and blending until smooth. You may have to stop and scrape down the sides.
- Toast the bread. Cut one end of garlic clove off and rub on both sides of toast. Cut up into crouton sized pieces.
- Add chickpeas, dressing and seeds to bowl of vegetables and toss well, ensuring dressing coats everything and serve!
