People ask what I miss since going vegan; most assume it’s bacon or cheese. I don’t really miss either. Definitely not bacon. I admit there are days I do miss cheese a bit, but then I think about the reality of what those 3 minutes of cheese eating means to baby cows. To me it’s just not worth it. One thing I do miss? CHOCOLATE BARS!! lol. Most mainstream chocolate bars contain dairy. I’m not a baker, but I have given a go at a few chocolate bars over the last while and here’s the one I did yesterday. The quickest recipe yet! I’ll definitely be posting more of them, so stay tuned! Who doesn’t love munching on a chocolate bar when they’ve developed the munchies????? I’ve yet to meet anyone to answer now to that!
Vegan Homemade ‘Kit Kat’ Bar:
These probably shouldn’t even get an entire page to themselves, they are so simple to make, but I’m making a bunch of home-cooked meals to fundraise for myself while I’m off work, so posting a short one so I can focus on that!
Ingredients:
- package of vegan wafers (I found some Voortman kinds are!)
- 1 /2 – 1 C vegan chocolate (depending on how many wafers you use, I made the whole pack, so 1 C)
- 1 Tbsp coconut oil (use less if you don’t use the whole package!)
Directions:
- Line a baking sheet with parchment paper.
- In a double broiler (or if you’re like me, and don’t have one, in a metal bowl, resting on top of a smaller pot of boiling water), melt chocolate and oil, mixing together.
- Once melted, drop a wafer in and coat with chocolate. I used a spoon to flip and pour chocolate. Use spoon to lift out, allow as much to drip off as possible and place on baking sheet.
- Repeat until they are all done.
- Pour a bit more chocolate over wafers that may need some help.
- Place in fridge (or freezer!) until hardened.
- Enjoy!
