BBQ Shredded Sweet Potato and Kale Sammich

I truly couldn’t believe I made it 40 years without eating this! One day, when my creative juices were flowing, I decided to try this out and I was impressed!!! Sweet potatoes are, well obviously, sweet! Even though

Ingredients
(for 4 servings)

  • 1 sweet potato
  • 1 teaspoon olive oil
  • 1/2 onion, diced
  • 1/2 cup vegan bbq sauce 
  • 1 tbsp Cayenne or smoked paprika (or another hot spice)
  • 1/2 tsp garlic, minced
  • salt & pepper to taste 
  • vegan buns
  • egg-free mayo
  • 1/2 cup kale, washed and de-stemmed
  • 1 med tomato, sliced

Directions:

  1. In a med-high heated pan, add oil. After heating for a few minutes, add onion. Stirring occasionally, cook til they start to become translucent
  2. Add shredded sweet potato; cook for a few minutes, stirring occasionally.
  3. Mix in BBQ sauce then add remaining spices.  
  4. Let simmer on med-low for about 3-5 minutes. 
  5. It’s now assembly time! Bun, mayo, kale,  2-3 tbsp of potato, tomato, bun!
  6. Enjoy!!!!
