Zucchini Noodle Salad

I’ve been looking up recipes to learn how to do more raw foods as I may be preparing meals for a friend who wants to go raw vegan for a while. If you’ve been following me for a while, you’ll know that raw vegan isn’t really what I do – so I’m teaching myself some recipes and the other day I came up with this.

Though, full disclosure, I used seasoned tofu, and I’m pretty sure this makes this dish not qualify as raw, for those who are super strict, but for those of you who want more raw dishes, or are okay with minimal tofu, this is for you!

I used zucchini noodles, okay, zucchini spirals, so you’ll have to have a spiralizer for this recipe. This is the one I use! If you don’t, maybe you can just slice the zucchini into thin slivers and toss into the mix! I also use pickled carrot slices that I had on hand. That recipe isn’t here, but you can just use regular carrots!

Without further ado, here you go!

ZUCCHINI NOODLE SALAD

Makes 2 servings:

INGREDIENTS:

  • 1 medium zucchini
  • 1/4 head of broccoli florets
  • 1/2 C purple cabbage
  • 1/4 pickled carrot slivers (or just use regular carrot slivers)
  • 1/4 C celery
  • 2 Tbsp sliced black olives
  • 1 small pack of seasoned tofu cubes (I used Ginger Tamari ones from La Soyarie)
    • at the time of writing this, their website is down, so I cannot link it, but I will put a photo at the end of ingredients list!)
  • 1/2 Tbsp each: hemp hearts, chia seeds and sesame seeds
  • Dressing:
    • 1 avocado
    • juice from one lime
    • 1 tsp garlic powder
    • 1 tsp sea salt
    • 1/2 tsp turmeric
    • 1 Tbsp apple cider vinegar
    • 1 tsp xanthan gum (optional, this helps thicken it)
    • 1 Tbsp agave (or another sweetener)
    • a few splashes of water until it’s as runny as you prefer

DIRECTIONS:

  1. In a bowl, add avocado. Mash with a fork until fully mashed.
  2. Add remaining dressing ingredients and whisk until it becomes a creamy dressing!
  3. Roughly chop the broccoli, cabbage and dice the celery.
  4. Use a spiralizer to create your noodles (or just cut in slices if you don’t have a spiralizer).
  5. Now add everything to the bowl. Mix it all up and serve!
