Hey there! You know what I was thinking the other day? That I’ve been making this basic hummus recipe for YEARS and I’ve never shared it anywhere! I try to make this often as it’s a great snack with some veggies or crackers and is an amazing source of protein! I had set out to make a Roasted red pepper hummus, but realized I didn’t have any red peppers left (shocking!), so with a last minute decision, I went with caramelized onions. And I do not regret it IN THE LEAST as it is truly delicious!
Fair warning, because I’ve been making this forever, I don’t measure anything. I eyeball the ingredients and just taste as I go. But for the sake of this blog post, I’ll estimate the measurements!
One of the most important tips/hacks as a vegan (or anyone really lol) is to keep the liquid from the chickpea can!!! If you don’t know about it, it’s called Aquafaba and can be used in so many ways, including as an egg replacement or to make meringue!! It’s magical.
You can also use fresh chickpeas if you want to cook them overnight, but I had one can left in the pantry, so used them up! I also usually use fresh lemon juice, but was gifted a bottle of it, so using that up! And lastly, traditional hummus usually has pine nuts on top, but I only had sesame seeds and they work just as well! Pumpkin seeds are also great! And hemp hearts! Okay, pretty much any family member from the seed family would work lol.
So without further ado, because I still haven’t been able to upgrade to the premium site (still broke!), here’s the recipe!
CARAMELIZED ONION HUMMUS
