Late night munchie balls…..

You get up to traipse through the kitchen to see what snack will satisfy your munchies….something sweet, something salty, something crunchy, something chocolate……..but what?? What do we have in the pantry??

15 minutes later, errr, sorry,….15 minutes later we set the timer to wait 40 more minutes while these set in the fridge 😂 😂 😂 😂 😂

Chocolate Peanut Butter Balls

I grew up having peanut butter balls at Christmas only as my mom would make dozens upon dozens of them. All different flavours as she’d always use a mix of ingredients. I’m unsure if they were all vegan (some had marshmallows, but you could use Dandies!), but these definitely are! This is another recipe that you can add whatever delights to it that you want! I’ve used coconut, chopped pistachios, raisins, chopped nuts, dates, vegan rice krispies, oats and more! Serving size depending on how much you use really, but I make them kind’ve two bite sized.

Ingredients:

  • 3/4 C peanut butter
  • 1/2 C vegan rice krispies
  • 1/3 C unsweetened coconut
  • 3 Tbsp vanilla extract
  • 1 Tbsp coconut oil
  • 1/2 C vegan chocolate chips
  • chopped peanuts for topping (pistachios are good toppings, as is coconut and tiny pieces of chopped fruit

Directions:

  1. Add all ingredients, except coconut oil, chocolate chips and any toppings you’re using to a bowl and mix it all until all are blended evenly throughout.
  2. Line a baking sheet with parchment paper. Roll about 2 Tbsp worth of the mix into balls and place on baking sheet.
  3. Chill in fridge for about 5 minutes.
  4. While waiting, melt chocolate chips and coconut oil on stove top on medium heat. Remove.
  5. One by one, roll a ball in the chocolate (I use spoons to help!) til covered and place back on the baking sheet. Add whatever topping you’ve chosen – I just remembered, another good topping is drizzled melted peanut butter!!! Drool!
  6. Place back in the fridge and chill for 40-45 minutes.
