When you’re craving a good ol’ traditional spaghetti dinner. Sometimes you just want some big ‘meatballs’ instead of a ‘meaty’ sauce and the stage was set! The only thing is, I have never made them!! I’ve only used store bought ones! The Yves brand has a pretty good meatless meatball and the IKEA veggie balls are pretty good. So I did, what many of us vegans do, I looked up non-vegan recipes and just veganized it!
If you’re lucky enough to have a wholesaler near you to purchase a box of 100 Beyond Meat burgers, you may at some point get a bit tired of eating burgers (I’m sure it MUST have happened to someone!!), and you’ll wonder what else you can make out of them. We don’t have the ground Beyond “meat” up here in Canada yet, so get creative! Here’s a great, simple starter recipe to work with 🙂 (***this recipe was written before the Beyond Ground made it to Canada – definitely use that if you’d prefer!)
Beyond Meatballs
Pair up with your favourite jarred pasta sauce – or make your own – and some freshly cooked pasta and herb and have your mind blown by these tasty little balls! This can make 12-14 small balls, or get brave and make 6 or 7 large ones!
Ingredients:
- 2 Beyond Meat patties, thawed
- 1 heaping Tbsp garlic, minced
- 2 Tbsp tamari/soy sauce
- 2 tsp dried basil
- 1/s tsp red chilli flakes (could use red pepper flakes also)
- 1/2 tsp sea salt
- 3/4 – 1 C panko (or other breadcrumb)
- 1/2 C non-dairy milk (I used soy)
- 1/2 C vegan parmesean cheese (optional)


Directions:
- Preheat oven to 400F. Lightly grease or place parchment paper on a cookie sheet.
- In a bowl, mash up the patties. I just used my hands, but put on latex gloves so my hands didn’t smell for days.
- Add remaining ingredients and mix together with hands until everything is incorporated.
- Adjust your panko & milk amounts so the mixture isn’t too dry or too wet. I formed one giant meatball with it to see how it stayed together.
- Form smaller meatballs (about 1.5″ in diameter) in your hands and place on cookie sheet. I’ve used an ice cream scoop to make them too!
- Bake for about 25-30 minutes, you can roll them over halfway. They should be done then, but if you want, you can do a quick broil for a few minutes (just watch them!) so they get crispier on the outside, while the inside remains chewy.
- Add to your favourite spaghetti sauce with noodles and enjoy! You could also throw them in a pot with some BBQ sauce and serve as is!
