Vegan Quesadillas!

I’ve yet to find vegan, gluten-free tortilla wraps (aside from Raw ones). I’ve made them though, and though they haven’t turned out the prettiest, they work!! The tortillas in these photos are not gluten-free though as this was made prior to me eliminating gluten.

Quesadillas are known for their bites of cheesy goodness so it was important to use a good, melty vegan cheese. I have loved using Parmela Creamery Plant-based Aged old cheddar style. The funny thing is, when I ate cheese, I DESPISED old cheese. Any of the strong cheeses really. I’ve never even tried Blue cheese before 🤷🏼‍♀️ as I was never a huge cheese person. I now say that must’ve been my inner vegan fighting to get out!!

Some folx like just plain old cheese quesadillas and that’s totally fine, I won’t judge you 😂 but I wanted to have these as a meal, so I made sure to add lots of veggies and tofu! Normally I’d add vegan sour cream, salsa, rice and beans, but due to availability, I skipped the sour cream and rice and served it up with some refried black beans, salsa and some garlic dip! I quick fry the veggies and tofu that I wanted in it, and tossed in some leftover fajita spice blend. I often just use some chili & garlic powder, but I had some of this leftover so just sprinkled it on top and mixed it in!

Once you have all of your ingredients ready to go, including having the veggies cooked, set one of the tortilla wraps into a large frying pan, spread half the cheese on top; pile on your veggies and then cover with more cheese! Lay the other tortilla on top. You’ll need to push down on it to flatten it out. I’m lucky enough to have this awesome and handy tool, so I use it to flatten them, but you can just use a spatula and push down across the tortilla.

The biggest trick I can say to make the process of making the quesadillas is to use a plate!! Once you’ve built your quesadilla and the one side is done cooking, you need to flip it. I’m not sure which of you can do such a thing without a disaster happening, but if you can, please tell me your secrets! For me, being the biggest klutz ever, I came up with a fool-proof way! That’s me, I’m the fool lol. Use a plate!!! I placed a dinner plate over top, as it’s just the size of the tortilla wrap. Lay it on top, then just flip the entire frying pan over! Once the quesadilla is on the plate, you can just slide it back into the pan to cook the other side! I also put the lid on for a few minutes as the steam that is created will ensure the vegan cheese melts! So many cook hacks!

This recipe makes one large quesadilla, cut into 8 portions. You decide how many people that can serve LOL. Double up if more is needed!!
