No, that’s not a typo! I made a loaf of french bread in my bread maker and used it for French Toast! But wait, isn’t French Toast made by dipping eggs in milk & eggs? Traditionally, yes! But this super easy to whip up recipe will not only give you tasty French Toast, you’ll be able to make them very quickly because I’m going to stop blabbing and get to the recipe!
Prep Time: 5 minutes Cook Time: 10-15 minutes, depending how many slices you make!
Ingredients:
- 4-6 slices of vegan bread (my go to are Silver Hills Bakery bread or my own homemade French bread)
- 3/4 C coconut milk (full fat kind from a can)
- 1 Tbsp maple syrup for cooking; then however much you wish to pour over top
- 1 tsp cinnamon
- 1 medium sized banana
- 1/2 nutmeg (optional)
- 1 Tbsp vegan butter (for pan) & additional if you want some on top of your French Toast
Directions:
- Put all ingredients except bread and butter into your blender and blend for about 15 seconds. You want it to stay thick but be blended. Pour into a bowl.
- Heat non-stick pan on medium heat. Melt vegan butter.
- Dip both sides of your bread into liquid mixture; hold above bowl allowing some of the liquid to drip off. Place in pan.
- Since all of our stoves run differently, I’d suggest to keep peeking underneath. It should take 3-4 minutes per side. You want it to cook until it’s a nice golden brown colour (or darker if you like them a bit crispy!).
- Top with butter and more syrup if you’d like and serve with fruit!
